One Pot Easy Spanish Rice – Only 5 ingredients!

Our family loves Mexican food and to go out to eat with a family of 5 it can be very expensive! We have found ways to eat what we love on a budget. This recipes pairs well with Enchiladas, our Carne Asada tacos, or Chicken fajitas. It’s very easy and hard to mess up! Enjoy!

Easy Spanish Rice


Cook Time: 20 minutes


2 tablespoons oil

2 tablespoons chopped onion (optional)

1 1/2 cups uncooked white rice

2 cups chicken broth (I use low sodium and it tastes great still)

1 cup chunky salsa ( I use Pace chunky medium salsa)


1. In a large skillet cook onion over medium heat until tender. (I skip this step since my children are not a big fan of onions.)

2. Next mix in the rice to the onion and oil. If you have omitted the onion then you will just add the oil and rice and slightly brown the rice. When rice is brown, stir in chicken broth and the salsa. Reduce the heat and cover. Simmer for 20 minutes until the liquid is absorbed.


-If you are running low on time skip the browning of the rice all together and just add the ingredients and simmer as directed. Rice will be a bit more tender but still yummy!

-Once my mixture gets to a boil I turn down the heat to low-medium. At 15 minutes I cut off the heat and leave the lid on letting the rice finish cooking without the chance of burning. Each stove is different, I unfortunately have an electric right now so be sure to watch your rice the first time you cook it and change the temperature and time cooked accordingly.
